Peanut Crusted Sweet Potato Fries

By: Brady Evans

If I had my way, I would never, ever, ever buy peanut butter. Usually, I walk by it quickly in the grocery store with my head down, even when it is on the list. I try to come up with a valid reason to tell my husband why I shouldn’t buy the peanut butter. Generally, I turn back to pick it up, knowing I will not tell a lie (“they were out”).

My husband doesn’t especially love peanut butter, at least not like I love peanut butter, but he thinks it is a pantry staple that should be kept stocked.

I just really, really love the stuff.  And sometimes when I’m all alone and my husband is in Iowa or New Jersey or some other random place I eat all the peanut butter.  I eat it by the fast spoonful, sometimes in such quick succession that the sticky sweet stuff hurts going down my throat. Amazing that the discomfort doesn’t stop me. Sometimes I truly hope that I’ll just get sick of it since I know it isn’t the best for me.

Sometimes I joke that I would eat anything if it had peanut butter in it.  Well, this isn’t an example of that. This combination is truly glorious and if you love either peanut butter or sweet potatoes, I urge you to give it a try!

A “Genesis” Of A Vision…

By: Shannon Shull

Genesis StudiosWhat if I told you that the Midlands of South Carolina is home to a truly amazing gem, an amazing that would impress just about anybody. Are you intrigued? Well, you should be! This fabulous place is called Genesis Studios. It is South Carolina’s largest, full-service, private studio facility. We’re talking about a complete production studio: HD & SD video/film production, live-switch multi-camera production, production management, post-production/editing, audio production, 3D animation and motion graphics, Interactive Media/DVD Authoring and more.

I personally didn’t believe it until I saw and toured the facility myself. And I’m not kidding…this place is fantastic! I lived and worked in the entertainment business in Los Angeles for over ten years, so I have been in my share of studios and supposed full- production houses. Genesis Studios is by far the nicest, most impressive studio I’ve ever had the pleasure of working in. This place is like the Google headquarters of production studios – they have such a creative & fun environment for their team.

And that’s just the facility I’m talking about. The people are a whole other story. These folks not only rock, but they know the biz; they “get it.” There a no wanna-be actors/directors, etc at this place. These folks are the real deal.

Forest & Wildlife Commercial Shoot at Genesis Studios

Now why I am sharing this information with my amazing Every Woman Blog readers? Because this place is just too freakin’ cool! I mean seriously, how many of you knew that we had a studio right here in Columbia equipped to do commercial, television and full-scale films? Some folks know that there are production studios in Charleston, but most probably don’t know that this gem of a place is right down the road. As far as I’m concerned, this amazing studio is a real asset to South Carolina and I really hope that it will attract many, many great projects to our state.

And I have to mention that this facility provides not only complete studio resources for television, film and radio, but also serves as a one-stop media resource. Their staff consists of expert writers, technicians, designers, editors, cinematographers, animators and more. From TV (film, video, and animation) to radio (audio production) to graphic design (print, web, interactive, outdoor), everything is produced under one roof.  The brilliant minds of the Indesign Firm, located in Genesis Studio, paired with the amazing talents of the Genesis team, bring a unique cross-section of skills, talent, and resources. In other words, they pretty much understand the strengths and weaknesses of all forms of media and know how to make them work together effectively to maximize impact and positive results.

Creative Genius behind Genesis Studios, Cliff SpringsCool tidbit – I had worked with the creator and owner of Genesis Studios, the awesome Mr. Cliff Springs, several times before I realized that one of my dearest childhood friends, Mr. Doug Adam, was the master mind owner of the Indesign Firm there at Genesis. What a lovely surprise! I instantly had no doubts that this team of creative minds could produce nothing but top notch, high quality work.

I have had the pleasure of working with these genius minds several times in the past couple of years. And every time we’ve worked on a project together, I have been so pleased with the experience. Their professionalism, knowledge and skills are outstanding.  Most recently I had the privilege of shooting a commercial with them for Forest and Wildlife. What a fun experience! You may have seen the commercial currently running on local television stations. Being a middle school drama teacher now in SC, it has definitely been interesting having my students say, “Ms. Shannon, I saw you on TV last night!!” 😉  Such fun.

Forest & Wildlife Commercial Shoot at Genesis Studios

Take a look at this quirky behind-the-scenes video for a little taste of everything it took to make this commercial possible. Oh and I promise I didn’t “hit on” the famous bat actor too much! (If you watch the video, you’ll know what I’m talking about.) 😉

Shannon Commercial Rehearsal for Forest & Wildlife

To close, I had often wondered about the name Genesis and always seemed to forget to ask Cliff about it whenever I saw him.  As I was reviewing their website, this description caught my eye…

“What is Genesis Studios? It’s a place. It’s people. It’s a resource. It’s a spark, a jungle gym, a Nerf war zone, and perhaps most importantly—a beginning, the “genesis” of a vision to develop, support, and promote high quality production in South Carolina.”

Come on… is that cool or what!?! Seriously, we are so lucky to have this facility right in our backyards!

An American Icon

By: Crissie Miller Kirby

I have always loved watching movies, whether I watch them in the comfort of my own home or surrounded by strangers in a theater, as I happily much on nachos, losing myself in the story lines, whether they good or bad. There is just something magical about the silver screen; you can literally forget the cares of the world for a few hours.

But, there is another place that I love to go to watch movies: The Big Mo.

The Big Mo, the drive-in theater in Monetta, South Carolina, has been a part of this community for nearly half a century, only being totally closed for 13 years in the late 80’s and most of the 90’s. I remember riding by it during my teenage years, seeing how it had been overtaken by weeds, trees and neglect. It was an American icon of a time gone by that had been given up to Mother Nature.

That is, until Richard and Lisa Boaz found her in 1998. A year later, the Big Mo was reborn under their love and care, and she has flourished ever since.  In 1999, double features were shown on one screen on the main field.  Today, cars will line up hours before show time to choose one of the three double features that are offered on three different fields.

How do I know so much?  I’ve sat in those lines and parked my car hours before a show time to wait and watch movies under the stars. And you can almost always find Mr. and Mrs. Boaz taking up the ticket money at the entrance.  Everyone, it seems, is greeted by a warm welcome and a smile with directions onto which field you need to be and to which station you should tune for the sound for your movies.

The Big Mo, I would wager, can lay claim to being a part of several generations of many families in this, and surrounding, areas.  My own mother talks fondly of how the drive in was one of her and my dad’s favorite hangouts when they were dating. Today, my own children love to run about and play on the playsets the Boaz’s have installed at the front of the fields, or throw footballs with their friends before the movies start. Often, they cajole me in to forking over the $1/each that it costs to ride the old electric train or the junior Ferris wheel.

For me, there is a feeling of safety here, a feeling of how people felt and lived back in the 50’s and 60’s, when times were simpler.  The hours before the movies start are not wasted or in vain; you make friends with those in the vehicles near you or you sit back and talk with the friends who have come along with you; it is a time of pure connection. When the sky darkens and the projector starts to roll, the boys clamber into folding chairs or onto laps or even into the back of the van where they can lie down in comfort and watch a movie. Sometimes, if we stay for both movies, it will be far past all of our bedtimes and the boys will have fallen asleep in the van. I have yet to sit in a theater building that gives the same feeling or experience that watching a movie under the stars at the Big Mo gives.

Much like watching a baseball game at one of the original major league baseball parks, watching a movie at the Big Mo instantly transports you back to a time of poodle skirts, ducktails, and muscle cars. Sure, things have changed through the years . . . no longer is there a speaker to attach to the car window to hear the sounds of the movies; today it is broadcast over FM radio frequency. Today the fields are packed with minivans, trucks, and larger-than-life SUV’s with admonitions to please be considerate and tie your back hatch down so as not to obstruct someone else’s view.  For those newcomers who may be unfamiliar with the custom, the Boazs typically send someone around with some twine to help pull those hatches down. Sure, there are still some 2 or 4 door cars parked on her fields, and I think many first dates are probably taken there. People come, in droves, from near and far to get that unmatched experience.

FilmUnfortunately, another very expensive change is looming large on the horizon for the Big Mo and all of her drive-in counterparts across the country: the forced upgrades from film projection to digital projection. Rough estimates project that the installation of a digital projector can cost upwards of $80,000. For the Big Mo, with her 3 screens, that figures skyrockets to almost a quarter of a million dollars.

We have the chance to do something to help her out though; we have a chance to help the Big Mo win one of four remaining digital projectors being donated by Honda to the a few drive-ins across the country, as a part of Project Drive-In.

Here is where you come in – the first round of voting has already ended and the first five projectors have been awarded; unfortunately the Big Mo was not one of the “top-vote-getters” in the first round.  However, we have the chance to help her win in the second round.

Go to http://projectdrivein.com/vote_52 and vote for the Big Mo.  You can vote once per day per computer and can also text a vote for her.  But do it quickly because the next round of voting ends on September 21st!

Let’s help keep the lights on in Monetta and at the Big Mo for generations to come.

FINALLY! Someone Takes My Advice.

By: Elizabeth Webber Akre

It is indescribably irritating to me when someone asks for my advice, opinion or help and then doesn’t take it. I’m sure I’m not alone here. If you really don’t want to receive and consider someone else’s input, don’t call a meeting just so you can say you had a meeting. But once every blue moon, someone surprises me.

There is a new café coming to town. No, I can’t tell you about it so don’t ask me. But, it’s coming and I happen to think it’s going to be a very welcome addition to the downtown scene.  So, get excited and when we can talk about it, we will.

Downtown

The owner of the new restaurant and his marketing folks asked me and a couple others to sit down and talk about the concept and the menu. It was so awesome! It was amazing to realize that here they were actually asking what we thought and liking our ideas. Decisions were made based on our conversation. Items that we suggested were added to the menu.  I’ve never been involved in anything like it before and it was really, really cool. What’s more, they want more meetings and more input over the next few weeks as they iron out the details for the café.

It was such a breath of fresh air to see someone ask me a question, write some notes, nod their head and say “Yes,” and “What a great idea,” and “We should definitely do that.”  For once, I left a meeting feeling like I hadn’t just wasted an hour and a half of my day Ideagiving my opinion, knowing it was going to be ignored. This get-together showed me that there are still some people out there who value others’ creativity and ideas. And, to use the time to really collect input demonstrated their respect of my time and that of the others involved. Yay, mankind!

Think tanks, mastermind groups, and coaching programs can be quite valuable, as long as the participants are truly interested in sharing their own ideas and considering those of others. To the folks who included me in the discussion, I say thank you. It was exhilarating to be involved in a forward-thinking conversation and to walk out knowing that my participation mattered.

I’m sure I’ve been guilty of the same. So, I’ve decided to make a conscious effort to only ask for input if I’m really and truly in the frame of open-mindedness to accept it.  I’ve also decided to make a conscious effort to ask for input more often. On a daily basis, I know that I get focused on my tasks at hand, put my head down and get the job done.  But, perhaps if I shake it up and get some other feedback once in awhile, I’ll find my days become more productive and even more fun.  And what woman couldn’t use a little of that?

So, does anyone have any advice on how I can get my daughter to get dressed, put on shoes, eat breakfast, and brush her teeth without me having to repeat myself over and over and over??

Asian Turkey Meatballs with Lime Dipping Sauce

By: Brady Evans

I was in a professional development (for teachers) workshop about two years ago and the discussion about tattoos came up. Should teachers have tattoos? What if they aren’t visible? Two different walls of the room represented opposing views and as the discussion developed, people drifted from one side to the other.

I think that as my generation ages, tattoos are becoming so normal. I don’t even get why someone would want a tattoo. Why does a person want something permanently branded on her body?

Even so, I toyed with the idea of a tattoo for maybe 2 years. I couldn’t think of the thing I wanted to forever be a part of me. I felt obligated that it should have something to do with my husband – that’s what you do, right?  But I wasn’t about to get his name, his face, or his initials inked into my skin. So I thought a symbol of our love might be nice. But I didn’t love the idea of making up a symbol for the sole purpose of the tattoo. No tattoo for me, I guessed.

I was in one of those super modern, evangelical Easter services this past year and I was watching the guy up on stage speaking to us and his arms were just blanketed in tattoos.  Imagine that.  A holy man covered in ink.

And then, out of nowhere on that day, an idea for my tattoo sprung into my mind’s eye.  I could not shake it. I mulled over it for months, and discussed it with people I loved and trusted.  My mom.

I didn’t listen to my mom. Getting a tattoo was basically the one thing I wanted to accomplish during my summer off (how immature is that?) and I did.

It is such a relief to have it. It is so perfect. It is so me. I will never regret it; I am sure of it.  Subtle red-brown silhouettes of my favorite things – my dog, my cat, my horse, a runner – quietly resting on my rib cage.  I run my fingers over the ink and realize how lucky I am.  My legs can take me distances I never thought possible. I can communicate with my horse in a language even I don’t understand.  My dog.  Oh, my dog.  And the cat for good measure.  You know cats – they have to be in the middle of everything.

——

This recipe has been floating around the internet for awhile.  It is really, really great. My husband was just blown away – though that might have been because he was coming off a week of eating on the road in Iowa. Meatballs aren’t the most low-maintenance thing to make, but they sure are fun to eat. It is nice to have them with an Asian flare and the lime dipping sauce is NOT optional.

A Tropical Taste of Fall

By: Mary Pat Baldauf

I had dental surgery earlier this month, and to prepare, I got some new smoothie recipes from my fave nutrition counselor, Traci. Unfortunately, I was so sedated afterwards that I didn’t feel like making smoothies (or anything else), but I’m starting to try them now. An Banana Spice Smoothieearly favorite is the Banana Spice Smoothie. It’s great, and the spices hint that fall is around the corner. This is great on its own. Another option is to freeze it overnight in an insulated cup, thaw for about an hour the next day and eat with a spoon. Sinful!

Something neat about this smoothie is the inclusion of kefir, which is full of probiotics. I’d never tried it before, but got a good 101 lesson on it here. It seems pretty common in grocery stores now; it’s usually stocked near the soy milk.

Enjoy!

What Is It About Football Season?

By: Shannon Shull

I am not a college football fanatic, never really have been. Yes, I grew up a Gamecock – it was a bit inevitable, seeing as how I grew up in Gamecock country and over half of my family graduated from the University of South Carolina. But I admit, unless it’s a USC game, Gamecock FootballI could give a flip what happens in any football game. I mean absolutely no offense, I just have no major connection nor the time to invest in college football.

But, by golly, there’s just something about being in an environment with a bunch of hardcore football fans – especially college football fans! The connection to their schools – oh the pride! It’s fantastic! So, between the great food, festivities and excitement in the air, if you’re with the right people, it can be electric and such fun! When it’s a Gamecock game, I go nuts and get into it – so I’m REALLY hoping the ole Gamecocks have a great season this year. 😉 But even if it’s not a USC game, it’s contagious watching a group of people on the edge of their seats, jumping up and down with the intensity of the game. Whether you have any clue what teams are playing or not, if you let yourself, you can really have a great time. Football games bring people together and create an atmosphere of camaraderie and competition that can be a blast.

Of course, that’s as long as you’re with logical, cool people who don’t take it too seriously and get too stupid! You know, the fools who scream and curse at the TV and anyone around them…you know those people. Sorry, but I cannot and will not tolerate those kind of football fans. Those supposed “know-it-alls” who act as if they could do better and actually would have made that touchdown had they been on the field. Yea, I’d just love to literally throw those fans out on the field and let them just try to do better! But I won’t go that route with my blog entry here, as I want to focus on the positive fun of football watchin’.

I’ve written an entry in the past sharing some amazing football-watching appetizers. Sometimes, the food is the highlight of any football gathering. I mean, any gathering that’s truly awesome has good food, right!? So pair that yummy food with great company and you’ve got a recipe for a dang good time.

College Football Map

Being an artistic person who teaches drama, I tend to people watch. It’s actually great fun to watch someone who is so invested in their team and see how they react as they cheer on the players throughout the game. Talk about a character study! Some folks are so dedicated that when their team experiences a loss of any sort, you can almost see their spirit literally break. It’s quite unbelievable at times. Yet the joy that overcomes their bodies when their beloved team does something right… watch out! It really is an experience. You don’t just watch, you feel. I’ve grown to love it – to see people happy is always a lovely thing.

I think that as I get older, I’ve really grown to appreciate this thing called football season. It’s wonderful to see good people come together to cheer on their team and truly enjoy their time together as they dive into the world of football and become so invested in their dear teams. Bless them all. Hey, if a bunch of dudes tossing a ball and smashing into each other creates this environment of fellowship and fun, then I am all for it!

So what is it about football season, after all? If we could harness the focus, energy, time and money spent on the sport of football, then we could certainly cure cancer, save the world or something along those lines, I’d think. There are many other events that are also overdone that that I could rant about, but instead I will keep it positive and focus on the basic truth that football season can truly be a lot of fun, if you let it. Even if you’re like me and you secretly couldn’t care less about who wins or loses, I think we can all appreciate any excuse for some positive “togetherness.”

GO COCKS!

The big world of college football is something that we can all look forward to for many reasons. And it’s ok if we don’t all have the same reasons, as long as we keep it positive, enjoy the electricity in the air, enjoy our time together and celebrate the game!

Hip Hip Hooray for Football Season and GO COCKS!!!  🙂

Savannah Craft Brew Fest

By: Katie Austin

Labor Day weekend is not only the end of summer, but it’s a time for last-chance getaways before fall activities consume our schedules. This year, temperatures were hot and college football kicked off (loud roar of applause from sports enthusiasts!).  There was also a fun festival in Savannah, one that we attend every year.

Craft Brew FestThe 2013 Savannah Craft Brewfest took place over this past weekend (August 30 – September 1) in of all places, downtown Savannah, Georgia. 🙂 The festival has a little something for everyone. We first visited the Brewfest where there were over 200 craft brews available to sample, food vendors and a great Katieatmosphere along the river. Since it was the first weekend of college football, people wore their school colors and we experienced football talk along the way. We are diehard Carolina Gamecocks which seemed to draw a crowd and good conversation 🙂

Booths

The Brewfest wasn’t the only event that took place. There were additional food and craft vendors lining River Street. One of the local high school bands entertained the crowd near the stage and later that night, a large screen showed the Georgia vs. Clemson football game. What a great way to watch the game: outdoors and along the river!

Blog post

If that isn’t enough, there were shops, restaurants and places to sit so you could watch the ships go by. Sitting on one of the many benches along the way when a ship comes in or leaves for the open waters will make you feel so tiny and in awe at just how large the ships are!

So, there you have it! Last weekend was the annual Grape Stomp and this weekend was another festival in Savannah, Georgia. Both events have a little something for everyone. Make sure to bookmark these dates for next year. I know we are planning to be there!

Wishing everyone a wonderful day!
